The original proposition
The proposal brought the thermopolion, the ancient market and contemporary Greek producers into a single visitor journey. Historically informed food would be prepared and served in reconstructed ceramic vessels, supported by costume, music, performance and interpretation.
Its central proposition remains commercially relevant: place of origin becomes tangible when a product is encountered through taste, material culture, story and live participation.
The 2019 submission was not accepted and the pavilion was not realised. Archaeopolis publishes the concept as an independently developed proposal record, not as a commission or collaboration delivered for the recipient.

Enter through the market
Designed for an international luxury-travel exhibition, the pavilion proposed that Greek gastronomy should be encountered through taste, place, material culture and performance. It was intended for travel buyers, hospitality professionals, media and culturally motivated travellers rather than only trade-product purchasers.

Adaptation today
- The format can be reduced to a single tasting salon or expanded into a multi-region national pavilion.
- It can serve travel fairs, hotel residencies, museum programmes or destination launches.
- A current edition should identify clearly what is historically documented, what is contemporary culinary adaptation and which regional stories are supplied by participating producers.
